Here’s what you will need:
1 tablespoon olive oil
2 carrots, peeled and diced
2 zucchini, diced
2 sticks celery, diced
1 brown onion, finely diced
400 g can diced tomatoes (or fresh)
2 cups vegetable stock
400 g can brown lentils, rinsed
½ cup parsley, chopped
1 lemon, quartered.
Here’s what to do:
Heat the oil in a large saucepan on medium heat and add carrots, zucchini, celery and onion. Cook stirring occasionally for ten minutes till vegetables start to soften.
Add tomatoes and stock to pan. Cover and bring to boil. Reduce heat and simmer, partially covered, for 15 minutes or till vegetables are soft.
Add lentils to soup. Cook for five minutes till heated. Sprinkle with parsley and a squeeze of lemon juice. Season with pepper if you like.
Serve with crusty wholemeal bread roll. Yum.
