Moodji Garden Vegetable Fritters

Here’s what you will need:
2 potatoes, grated
1 carrot, grated
2 zucchini, grated
Kernels from 2 fresh corn cobs
1 onion, chopped
½ cup SR flour
½ teaspoon salt
¼ cup chopped parsley
3 eggs separated
2 tablespoons olive oil
Here’s what to do:
Peel potatoes and carrot, grate into a bowl. Add zucchinis, corn, onion, flour, salt, parsley and egg yolks into the bowl. Stir to combine.
Place egg whites in a bowl and beat until stiff peaks form. Fold through vegetable mixture.
Heat large pan over medium heat. Add a little oil. Take 1/3 cup of the mixture and cook for five minutes. Cook four at a time. Turn and cook for further five to eight minutes. Repeat.
