Cherry ripe slice
The Cobargo Red Cross offers catering services for funerals, special occasions, clearing sales and so on in the Cobargo district. We provide sandwiches, slices, tea and coffee. We support our local farmers by assisting Bega Red Cross working in the saleyards canteen providing morning tea and lunch on Tuesdays and for the stores sale on Thursdays.
For the base:
150 gms copha
1 can sweetened condensed milk
A few drops of red colouring
1 packet Milk Coffee biscuits
240 gms coconut
1 packet glacé cherries, diced
Crush biscuits and mix in coconut and diced glacé cherries. Melt copha over low heat and when melted mix in condensed milk and red colouring until combined. Pour into dry ingredients and mix thoroughly. Press into greased lamington tin.
For the top:
100 gms copha
1 cup powdered drinking chocolate
Melt copha over low heat and stir into sifted drinking chocolate. Pour over base, place in fridge and cut when set.
