Honey roasted almonds
There is nothing like a touch of pure, delicious honey to lift a meal. It blends perfectly with sweet, sour and salty flavours to give a whole new level of complexity to any dish.
Add it to a marinade, drizzle it over a dessert, stir it into your tea.
In fact, just about everything benefits from a dash of honey.
Ingredients
2 cups almonds (about 300 g)
2 tablespoons honey
2 tablespoons olive oil
2 tablespoons water
1 teaspoon salt
½ teaspoon cinnamon
Method
Place the almonds on a baking sheet. Put them in a cold oven and then heat to 180° C while roasting for 12 minutes. Check on them frequently, shaking the pan at least twice while they are roasting. They can burn quickly if you leave them unattended!
While the almonds are in the oven, mix the honey, coconut oil and water together in a saucepan over medium heat. Bring to the boil and stir constantly for about 5 minutes. Reduce to a simmer while the almonds finish roasting.
After the almonds are done, pour them into the saucepan and stir, coating completely. Let them sit in the honey mixture for 5-10 minutes so it soaks into the nuts, stirring occasionally.
Sprinkle on salt and cinnamon and stir until completely incorporated. Spread out on a parchment paper covered baking sheet and cool completely.
